Earlier this year, we had the pleasure of hosting chef Andres Giraldo Florez for a special Canyon dinner in Echo Park. Snail Bar, his Oakland restaurant (and one of our all-time favorites), is known for food that feels both unfussy and surprising, comforting and intuitive.

About Andres

At home, his mornings are similarly thoughtful: coffee brewed to a golden ratio, a specific mug in hand, and magazines at the table. It was a delight to visit Andres in Northern California to chat design, music, and memory.

LPWhat's the first thing you do after waking up?
AGF

Turn on my water heater to make some coffee while I feed my cats.

LPWhat's your go-to morning beverage and how do you make it?
AGF

I normally do a pour over coffee—30g beans to 350g water. Depending on the blend, I’ll add a little extra water if it’s too heavy. I typically like lighter brews, especially Kenyan.

LPDo you have a favorite mug or drinking vessel?
AGF

I do! It’s my Fritz coffee mug that I received as a present from the owner while I was cooking in Korea.

LPWhere do you usually drink your coffee?
AGF

My dining room table so I can look at magazines and stay off my phone.

LPWhere did your instinct for hospitality first begin?
AGF

Definitely my grandma. I’m actually a third-generation chef in my family.

LPWhat's an unexpected flavor/ingredient pairing that you've been into lately?
AGF

Jalapeños and Riesling!

LPWhat's a personal ritual or source of inspiration that helps you stay open to new creative influences?
AGF

I personally gain a lot from seeing other peoples homes and by surrounding myself with super talented individuals. I’d say just being curious always opens so many doors in that regard. Traveling also influences my food

LPWhat are some kitchen or table objects that you think are perfectly designed?
AGF

Yakumi pans from Japan are so aesthetically pleasing and perfect for service

LPYou've talked about wanting Snail Bar to feel like a house party. What's a dish and a song that feel like home to you?
AGF

“Iko Iko” by The Dixie Cups and a ham and cheese sandwich. To me, cooking is always about comfort by design.

We first met Loup through Atelier Lips, the ongoing ceramics project he runs with his friend, the artist Charlotte vander Borght. Here, some of that thinking becomes more direct through cups, vases, and small objects made for everyday use. We carry the Atelier Lips espresso cups at Canyon, and they've become some of our most-used pieces: compact and geometric, at once sculptural and playful.

For this edition of Morning Rituals, we met Loup at his apartment in the East Village for a conversation on ideal mornings, finding inspiration in the unexpected, and making work that feels right.

We've followed the work of NY artist Sarah Nsikak for years, drawn to the way she moves between the functional and the atmospheric. It has felt full circle to now have one of her beautiful textiles at home in our new Brooklyn café: a lightweight panel hand-stitched organza silk and antique fabric.

Hospitality sits at the center of everything Rowan Spencer and Emma Leigh Macdonald do. Through their project Mon Petit Canard, the partners and collaborators bring together food, music, and storytelling, creating gatherings that feel as natural and welcoming as spending an evening at a friend’s home.
